Paris-based startup Standing Ovation has secured a €30 million funding round to accelerate the production of animal-free dairy proteins using precision fermentation. The fresh capital will support the company’s move from pilot scale to industrial manufacturing, targeting large food producers seeking to develop realistic cheese and dairy alternatives without relying on cows.
Precision fermentation powering animal-free dairy
Standing Ovation focuses on producing key dairy proteins, particularly caseins, which are essential for the stretch, melt and texture of cheese. By using precision fermentation, microorganisms are programmed to produce these proteins in stainless steel tanks, bypassing traditional livestock farming.
The process aims to dramatically cut the environmental footprint of dairy by reducing greenhouse gas emissions, land use and water consumption, while maintaining the taste and functionality consumers expect from conventional products. The company’s ingredients are designed to be incorporated into existing food manufacturing lines, enabling major brands to launch animal-free cheeses, yogurts and other dairy products.
Scaling production and regulatory roadmap
The €30 million infusion will be used to expand R&D, build out fermentation capacity and navigate the complex food regulatory landscape in Europe and other key markets.
